Healthy, Protein Gingerbread Men

IMG_2701It’s the most wonderful time of the year! And that is precisely why I am back in the kitchen baking. Makes 8-10 Gingerbread Men

– 60g gingerbread protein (2 sachets)

– 100g ground almonds

– 100g coconut flour (or can use 200g total of ground almonds instead)

– 1 tsp cinnamon

– 1/2 tsp ground ginger

– pinch of salt

– 100g coconut oil

– 1 egg, beaten

– 2 tbsp coconut milk

– 1 tbsp honey

  1. Pre heat the oven to 180 degrees.
  2. Mix together all dry ingredients in a large mixing bowl. Then add the egg, melted coconut oil, coconut milk and honey and stir until a dough is formed.
  3. On a lightly floured surface roll out the dough and cut out your gingerbread men (cookie cutters from Rober Dyas).
  4. Place onto grease proof paper on a baking tray and bake in the oven for 10-15 minutes or until golden brown.
  5. Leave to cool slightly then tuck in.
